Vegan Summery Crispy Chicken Salad

Ingredients (for 2 persons)

  • 1 cucumber
  • carrot
  • vegan crispy schnitzel
  • 500 grams mixed salad


  • 1 tablespoon honey or agave syrup
  • 2 tablespoons lime juice
  • 3 tablespoons sesame oil
  • 2 tablespoons soy sauce


  1. Cut the cucumber in half lengthwise and scrape out some of the watery centre with a teaspoon, then cut into slices.

  2. Wash and peel the carrot.

  3. Mix all the ingredients for the dressing together and set aside.

  4. Wash the lettuce thoroughly and mix it with the dressing. The lettuce can then be spread on a plate.

  1. Place some cucumber and carrot on top of the lettuce

  2. Meanwhile, fry the vegan crispy schnitzel as instructed on the packet.

  3. Cut it into thin slices and place these on the lettuce.
