Ingredients
For 2-4 people:
- 6 pieces fresh vegan bratwurst
- 1 chopped onion
- 3 cloves of finely chopped garlic
- good pinch of pul biber or chili flakes
- good pinch of salt and freshly ground black pepper
- handful of parsley finely chopped
- 1 can diced tomatoes
- 100 ml red wine
- 1 tsp sugar
- 125 grams cherry tomatoes halved
- 350 grams tagliatelle
Preparation

Heat a dash of oil in a frying pan or casserole. Briefly fry the onions with a pinch of salt, pepper and chili flakes.

Cut the vegan bratwurst into slices and fry briefly with the onions. Add the wine, diced tomatoes and fresh tomatoes along with 1 tsp sugar.

Stir everything well. Allow the sauce to simmer for 25 minutes without a lid (the longer, the tastier).

Cook the tagliatelle according to the instructions on the package.

Stir the fresh parsley into the sauce and mix in the tagliatelle.

Serve the pasta with vegan cheese if desired. For extra spice, sprinkle more chili flakes over the pasta just before serving.

TIP: instead of parsley, you can also use basil or rosemary. Using a mixture of fresh herbs is also very nice. If you don't want to use fresh herbs, add a generous tablespoon of dried Italian herbs.
