Ingredients
For 4 people:
- 1 onion
- 1 leek
- 1 winter carrot
- sunflower oil
- 600 grams vegan beef pieces
- 4 sprigs of thyme
- 4 bay leaves
- 4 cloves
- 6 juniper berries
- 2 dl vegetable stock (or vegetable bouillon)
- 2 glasses red wine
- 1 tbsp apple syrup
- 1 tbsp smooth mustard
- 4 tbsp drained silver onions
- 100 grams vegan bacon strips
- 200 grams mushrooms
- 8 sprigs of fresh parsley, finely chopped

Peel and chop the onion, leek and carrot.

Heat a dash of sunflower oil in a frying pan and fry the vegetables.

Turn up the heat, add the beef pieces and cook until nicely coloured

Deglaze the pan with the red wine, bring to the boil and simmer for 5 minutes.

Add the vegetable stock, apple syrup, mustard, thyme, cloves, bay leaves and juniper berries.

Bring to the boil, lower the heat and simmer for about 40 minutes.

In the meantime, cut the mushrooms into quarters.

Heat a dash of sunflower oil in a non-stick pan and fry the bacon strips until nicely browned.

Add the sliced mushrooms and fry together for a while.

Add the silver onions, fry these for a moment and mix in the chopped parsley.

Season with salt and pepper.

Taste to see if the stew is sufficiently seasoned, otherwise add some more salt and pepper.

Serve with boiled potatoes, for example.
