Preparation

  1. Preheat the oven to 175 degrees with the grill setting on.

  2. Clean the avocado and scoop the flesh from the peel.

  3. Put into the food processor together with the juice and zest of the lime and a dash of olive oil and process until smooth.

  4. Retain a few tops of coriander and chop the rest very finely. Mix with the avocado.

  5. Cut the tomato into quarters, remove the seeds and cut the flesh into small cubes. Mix with the avocado.

  1. Season the guacamole with salt and pepper.

  2. Heat a dash of olive oil in a non-stick pan and fry the minced meat with the paprika powder until nice and golden brown. Season with freshly ground pepper and salt if necessary.

  3. Distribute the chips over a large bowl and spoon the minced meat, corn kernels, beans and jalapeño peppers on top.

  4. Place in the preheated oven and bake for about 8 minutes.

  5. Remove from the oven and divide the salsa and guacamole over it.
